Carrot, Orange & Almond Spring Loaf

👁️Why this recipe is good for your eyes
Carrots – rich in beta-carotene (vitamin A precursor)
Orange zest & juice – vitamin C supports blood vessels in the eyes
Ground almonds – vitamin E helps protect eye cells from oxidative stress
Eggs (or flax alternative) – support nutrient absorption
📝 Ingredients (Serves 4)
200g grated carrots
Zest of 1 orange
2 tbsp fresh orange juice
150g ground almonds
100g plain flour (or spelt)
1 tsp baking powder
1 tsp cinnamon
2 eggs (or 2 tbsp ground flaxseed + 5 tbsp water for vegan version)
80ml olive oil
100g light brown sugar or maple syrup

🍽️ Method
Method
Preheat oven to 170°C (fan).
Mix all dry ingredients together in a large bowl.
Whisk wet ingredients separately.
Combine wet and dry ingredients, folding in the carrots and orange zest.
Pour mixture into a lined loaf tin.
Bake for 40–45 minutes until golden and set in the centre.
Allow to cool before slicing.
