Strawberries, raspberries, blackberries and blueberries are great superfoods for healthy functioning eyes. Berries are packed with nutritious vitamins and minerals and are of particular benefit in maintaining eye health. Antioxidants present in most berries may help to prevent dryness, lower blood pressure, vision defects and macular degeneration.
Ingredients
110g butter or margarine
110g caster sugar
110g self raising flour
2 eggs
1tsp vanilla extract
1tsp baking powder
500g pack of frozen mixed berries
Sprinkle of icing sugar to serve
Method
Pre heat the oven to 180 degrees
Pour the frozen mixed berries into a ceramic dish
Cream the butter and sugar together, then add the eggs one by one. Fold in the flour.
Stir in the vanilla and the baking powder
Pour the cake mix on top of the berries and spread around with a spoon
Bake in the oven for 40 to 45 minutes, or until the cake is golden brown and a skewer inserted in the middle comes out clean
Leave to cool and serve warm or cold, with a drop of cream or custard.
