Roasted Red Pepper & Sweet Potato Pasta

A cosy, colourful dish full of eye-loving nutrients — perfect for lunch, dinner, or batch cooking.

🛒 Ingredients:
2 medium sweet potatoes, peeled and cubed (beta-carotene = vitamin A)
2 red bell peppers, halved and deseeded (vitamin C + antioxidants)
3 cloves garlic, unpeeled
1 tbsp olive oil (vitamin E)
1 small handful fresh basil (lutein & flavour!)
1 tsp smoked paprika
Salt & pepper to taste
250g pasta of your choice (wholewheat if you like)
Optional: sprinkle of feta or nutritional yeast for a savoury kick
🍳 Method:
Preheat oven to 200°C (180°C fan).
On a baking tray, toss the sweet potato cubes, red peppers (cut side down), and garlic cloves with olive oil, salt, pepper, and smoked paprika.
Roast for about 25–30 minutes, or until the veg is soft and slightly charred.
Cook your pasta according to the packet while the veg roasts.
Once everything’s cooked, squeeze the roasted garlic from its skin and blend it with the peppers, sweet potatoes, and basil. Add a splash of water or pasta water to loosen if needed.
Stir the sauce through the drained pasta and top with crumbled feta or your favourite garnish.
